Nürnberger Lebkuchen (Nuremberg-style Gingerbread)

Time 1 hrMakes 15 servings

Nürnberger Lebkuchen (Nuremberg-style Gingerbread)

Directions

  1. Beat eggs and sugar until the mixture is thick and pale yellow
  2. Add honey, candied fruit, grated almonds, spices and fold until incorporated
  3. Stir in coffee or milk and mix well into a batter. Coffee will darken the Lebkuchen, whereas milk will lighten it.
  4. Sift flour and baking powder together.
  5. Slowly stir in the flour mixture into the batter and mix thoroughly.
  6. Grease (with shortening) and flour baking sheet or browning pan. This batter will act much like brownie mix.
  7. Bake in a pre-heated 400° (F) oven - about 25 mins. It should rise slightly and turn golden brown.
  8. Remove from oven and cool on a rack.
  9. After partially cooled, glaze with Lebkuchen glaze (mix confectioner's sugar, corn starch together. Add extract. Form a glaze.) Or sprinkle with powdered sugar to coat.
  10. Decorate with slivered almonds.
