Elisenlebkuchen

Time 1 hrMakes 50 servings

Elisenlebkuchen

Directions

  1. Beat eggs and sugar until mixture is thick.
  2. Fold in almonds (grated), candied fruits, cinnamon, lemon rind (grated), and Lebkuchengewürz. Mixed thoroughly.
  3. If using back-oblaten, add a tablespoon of mixture to each oblaten and spread to near edge keeping a mound in the center but the edge free. If not using oblaten, form into small balls and flatten, like making press cookies.
  4. Place either on a parchment-covered baking sheet, uncovered, and let set in a warm area for 12 hrs (overnight).
  5. Bake in a pre-heated 300° (F) oven - about 25 mins. It should rise slightly and turn golden brown.
  6. Remove from oven and cool on a rack.
  7. After partially cooled, glaze with Lebkuchen glaze (mix confectioner's sugar, corn starch together. Add extract. Form a glaze.) Or sprinkle with powdered sugar to coat.
  8. Decorate with slivered almonds.

Lebkuchengewürz / Lebkuchen Spice Mix

  2. Store in a sealed, airtight jar or container.
