Directions
- Make cookie base dough per recipe. You can add lemon zest or vanilla to it to add flavor.
- Preheat oven to 325° (F)
- On a floured board, roll out dough to approximately 1/4 inch thickness.
- Cut two different pieces, a set per each cookie. One in a solid version of the shape, the other with a hole in it.
- Place shapes on a lined cookie sheet, brush with a little egg yolk, and sprinkle with sugar.
- Bake shapes until cooked and nicely brown (10-12 minutes)
- Remove shapes from oven and allow to cool. Use wire rack for best results.
- Once cooled, spread jam onto solid-shaped cookie and lay the shape with the hole on top. Press gently.
- Optional: Sprinkle liberally with powdered sugar, focusing on the baked cookie layers.
- Optional: Once assembled, return to oven for 1-3 minutes to allow jam to become baked too.
Christmas Cookie Base Dough
- Combine butter, salt, and powdered sugar together in bowl and mix until fully incorporated into a base dough. It should be creamed.
- Slowly fold the flour into the dough, mixing until there are no lumps and a consistent cookie dough forms into a ball. If required, slowly add in more flour as different kinds of butter can have different moisture levels.
- Refrigerate the dough for about 45 minutes until it hardens. If you are using for press cookies, do not harden as much as if you are doing drop or cut cookies.
