Directions
- Make the batter: put the flour, eggs, milk and salt in a large bowl and whisk into a smooth, thick batter.
- Prepare the apples: peel and core the apples, and cut them into rings about ½ inch (1 cm) thick.
- Add the lemon: briefly turn the apple rings in the lemon juice so they stay nice and light.
- Heat the butter: melt a little butter in a large frying pan over medium heat.
- Dip the apple rings: pull the rings through the batter one at a time, so they are well coated all around.
- Fry until golden brown: put the apple rings in the hot pan and fry about 2–3 minutes per side until golden brown. Add more butter as needed.
- Roll in cinnamon sugar: drain the finished fritters briefly on paper towels and, while still warm, roll them generously in cinnamon sugar.
- Serve: best enjoyed right away, while they are lightly crisp outside and wonderfully soft inside.
Oma's little tip: Use slightly tart apples like Boskoop or Elstar (in the US, try Granny Smith or Braeburn). They make a lovely contrast to the sweet batter and the fragrant cinnamon sugar.
