Lebkuchenherzen

Steps

Lebkuchengewürz Preparation

  • In a sauce pot over medium heat, combine butter, honey, sugar, cocoa, and Lebkuchengewürz, stirring until dissolved and then cool, forming a wet mix (almost like molasses)

  • Sift flour, salt, and baking powder together forming a dry mix

  • Make a hole in the dry mix and combine in 1 egg (whole)

  • Pour cooled wet mix into dry mix and egg (whole) and mix on low speed until fully incorporated and forms a ball of dough

  • Wrap ball of dough in pastic wrap and set aside 8+ hrs (can chill in refridgerator)

Lebkuchen Dough Preparation

  • Preheat oven to 350F

  • Flour a board and rolling pin

  • Roll out chilled dough to 1/4" thick

  • Cut rolled out dough into desired shapes (hearts or other shapes, whatever you can think up)

  • Line a baking sheet(s) with parchment

  • Place dough cut outs on parchment-lined baking sheet(s)

  • Brush dough cut outs with glaze (beaten egg yolks)

  • Bake at 350F for 20-25 minutes

  • Remove from baking sheet(s) and let cool

Lebkuchen Decorating

  • Mix confectioner's sugar, 3 beaten egg whites, and cream of tarter into icing (do not over mix)

  • Allow icing to harden in refridgerator

  • Decorate baked and cooled Lebkuchen as you prefer
