Directions
- If bread is fresh, toast (crusts on).
- Break bread (crusts on) into small pieces ("croutons").
- Sauté onions and butter until onions are softened.
- Add bread ("croutons") and toss with onions and butter. Allow to incorporate for a few minutes.
- Add stock (can be beef, vegetable, chicken, or your own). Slowly bring to a near boil, stirring consistently.
- Once boiling, reduce heat and allow to simmer for 15-20 minutes. Continue to stir and break down as much of the bread as possible.
- Add sour cream to thicken. The color might lighten slightly.
- Puree the soup with either an Immersion Blender (Chef's Wand) or use a food processor. Continue to puree the soup until you reach the desired consistency. Salt & Pepper to taste.
- Ladle finished soup into bowls. Add garnish of sour cream, chopped chives, bacon (candied bacon is great), cheese, and/or croutons. Be creative and add some color to your soup.
